Hyderabad: The delectable taste and favours of Italian cuisine have found a delightful home at Novotel Hyderabad Airport with its ongoing ‘World of Italian Cuisine’ food festival. Running until February 24, 2024, this culinary celebration promises to treat Hyderabadis to the unique culinary delights of Italy.

As customary at Novotel Hyderabad Airport, visitors are welcomed with exciting mocktails, such as the refreshing peach virgin cosmopolitan, upon entering the restaurant. The culinary journey then unfolds with the Italian lemon barley soup (chicken), a soothing and refreshing prelude to the extensive menu.

Appetisers prepare the palate

Among the appetisers, herb-crusted baked chicken bites take centre stage. Crispy on the outside with succulent chicken within, the mixed herb flavour enhances the taste, offering a delightful experience. Complementing this, crumpled polenta goujons provide a crispy and crunchy treat.

The festival caters to seafood enthusiasts, featuring options like smoked salmon with capers and seafood marinara, tempting diners to explore the diverse offerings. Moving on to the main course, a live counter allows the customisation of authentic Italian delicacies, where pasta is tailored to individual tastes.




Hyderabad can experience universal tastes every month

Executive Sous Chef, G Ganesh Kumar, shared insights into the festival’s concept, stating, “We have done all Indian food festivals last year, covering all states. We wanted to bring the flavours of Italy to Hyderabad so that people can enjoy the herbs. Italian food incorporates herbs in its cuisine, and we aimed to introduce that taste to our local guests for their enjoyment. While pasta is widely appreciated, we wanted to showcase homemade pasta varieties like ravioli and cannelloni, providing an international touch to the food. We plan to alternate between Indian and international cuisines every month.”

Chef Ganesh Kumar emphasised the ongoing efforts to introduce new dishes weekly, offering guests a diverse and authentic Italian experience.

He elaborated, “We are focusing on bringing authentic dishes to the table so that people can savour new flavours beyond pasta and pizza. Exploring the cultural aspects, we are incorporating elements like hunter’s food from Italy into one of our week’s menus. We aim to constantly refresh the offerings, ensuring an enjoyable culinary journey for our patrons.”
