This versatile vegetable originated in the Andes Mountains of South America (modern-day Peru, Ecuador, Chile, and Bolivia) as small, wild berries. They were later domesticated in Mexico by indigenous people before being introduced in Europe by Spanish explorers in the 16th century.
Origin of tomatoes
The original wild plants produced tiny, sour fruits. While the plant originated in South America, it was likely domesticated in Mexico. The name is derived from the Aztec word 'tomatl.'
Spanish explorers brought them to Europe in the early 1500s. Initially, many Europeans feared tomatoes as poisonous, associating them with the poisonous nightshade.

Tomato Rice Recipe
Ingredients
Rice: 1 cup Basmati or sona masuri rice, pre-cooked and cooled, or soaked for 30 mins if cooking in a pot.
Tomatoes: 4 medium, ripe and red, finely chopped or pureed.
Onion: 1 medium, thinly sliced or chopped.
Aromatics: 1 tbsp ginger-garlic paste or 10 cloves of crushed garlic, 1-2 green chilies slit.
Spices: 1 tsp mustard seeds, 1 tsp cumin seeds, 1 tsp chana dal, 1 tsp urad dal, 1 bay leaf, 1-inch cinnamon, 3 cardamom pods, 1/2 tsp turmeric powder, 1 tsp red chili powder, 1 tsp garam masala.
Herbs: A handful of curry leaves, 2 tbsp fresh coriander leaves.
Fat: 2 tbsp ghee or oil.
Salt to taste.
Instructions
Prepare the Tomato Base.
Heat oil/ghee in a pan over medium heat. Add mustard seeds and let them splutter.
Add cumin seeds, urad dal, chana dal, bay leaf, cinnamon, and cardamom. Sauté until the nuts turn golden.
Add sliced onions, green chilies, curry leaves, and ginger-garlic paste. Sauté until the onions are translucent.
Add the chopped tomatoes, turmeric, red chili powder, coriander powder, garam masala, and salt.
Cover and cook until the tomatoes turn very soft and mushy, and the oil starts to separate from the masala (about 5 minutes).
Combine with Rice:
Add the cooked rice to the pan.
Gently mix the rice with the masala, being careful not to break the grains.
Cook on low heat for 2-3 minutes to allow the rice to absorb the flavors.
Garnish with fresh coriander leaves and an extra teaspoon of ghee, if desired.
Turn off the heat, cover the pan, and let the rice rest for 10-15 minutes before serving. This improves the flavor.
Serve hot with raita or curry.
Tips for Success
One-Pot Method: If you prefer to cook raw rice with the tomatoes, add 2 cups of water after cooking the tomatoes, bring to a boil, add the soaked rice, and cook for 15 minutes.

You can add peas, carrots, broccoli, or beans to increase the nutritional value.
